Hey guys and happy Monday! Today was not a great day for me, I have been extra tired and dealing with the worse headache but despite that I definitely wanted to make sure I posted before the end of the day. So this week I have restarted meal prepping! I am still new to this but I really love doing it! There is something about coming home from a long day of work, knowing your food is already cooked and you can dedicate your time to other important things (Like going to bed early! ) I plan on meal prepping every week Monday-Friday and leaving Saturday and Sunday for either going out or cooking something more creative. This week I have two separate meals :
- Steamed tofu with onions and garlic, quinoa and brussle sprouts
- Kale, mushrooms, onions, with rice and sweet potato
I do have me reservations about meal prepping, a few being, missing the kitchen, becoming bored and not eating enough food. However I have done some research on successful meal prepping and I am hoping to get passed my fears. Once I get the hang of it, I will share my meal prep tips and recipes with you guys! Speaking of recipes, I am going to try a vegan blueberry muffin recipe….now, I can not bake to save my life but hey, why not! Haha. In all I am just ready to close out this Monday and hopefully I will feel a lot better tomorrow! Also, don’t forget the go to my contact tab!
